Rhubarb, orange and ginger jam

Jay asked me to post this recipe Smile  

3lb rhubarb  cut in pieces 
3lb sugar
2 large or 3 smaller oranges use the Juice and rind
Ginger around finger size piece grated 
Juice of a lemon

Add everything to pan and leave overnight
Next morning bring to the boil and continue boiling to setting point
Jar into hot sterile jars add lids.  

I use an old set of Avery lb and oz scales so I don’t do metric. 

Think that’s everything.

I love jam recipes, especially tried and tested ones. How strong is the ginger flavour in this Bren, is it obvious or just a hint?

Mikey its a hint of ginger but you could always use more. There's lots of different recipes some use stem ginger never tried that though.

I've always got both stem and fresh ginger in the house, it would be up for debate at home. I love the flavour of rhubarb but, the girls would prefer the flavour of the ginger and orange. I often get found out for hiding vegetables in things as neither of them are particularly big veg eaters. Wink
