RE: 2025 - Today's Recipe - Vinny - 02-08-2025

I bought lamb steaks, gammon joints and gammon steaks today so I was spoilt for choice? I decided on the lamb steaks as lamb is my favourite. Eaten dipped in mint sauce, Kato mamanged to get his share as well. Rolleyes One of the gammon joints is in the oven for ron, and the other gammon joint is in the freezzer. The rest of the lamb steaks and the gammon steaks I have seperated out and open froze on a plate for each. Once frozen I will bag them up! Smile

Leftover homemade fried rice (with more veggies than rice in it) for lunch, and we'll have roast chicken with roast potatoes, kale, broccoli and peas for tea. Rhubarb and strawberry crumble, or blueberry crumble (bilberry, really, if I'm picky) with vanilla sauce or whipped cream for pudding.

Experiment time again! Rolleyes I grew some nice blackcurrants and made half a dozen jars of blackcurrant jam. Fruit is not really a part of the carnivore diet (although berries in season are allowed!) In an effort not to waste this gorgeous jam I am experimenting with a recipe involving eggs, cottage cheese, parmesan which ARE carnivore, and making a pie! I beat up three eggs then added them to a lined pie dish. Cooked in the oven for 20 minutes, checking regularily, the added a layer of blackcurrant jam (small jars worth) a full tub of cottage cheese and toped off with parmesan shavings! Cooked in the oven again for about 20 minutes, checking regualrily until the parmesan had melted. The whole lot is now in the fridge cooling down, awaiting tasting. I don't use any grains (flour) or  seed oils so can't just use pastry.
Just in case it turns out rubbish, I have some pork ribs, which I seasoned with a chinese Char Su powder cooking away in the air fryer as a backup! Big Grin
